About the Recipe
These cinnamon rolls are a true labor of love that your family and friends will adore you for. A delicious weekend project that your children and grandchildren will have fun making with you. The kitchen will get messy, but the memories will be lifelong.
Ingredients
Dough
1 cup mashed potatoes (about 2 potatoes yields a cup)
1 cup reserved potato water
3/4 cup butter OR margarine
3/4 cup sugar
2 teaspoons salt
1 cup hot water
2 envelopes active dry yeast
1/2 cup warm water
2 eggs
8 1/2 cups bread flour (or all-purpose), add more if needed
Filling: Per Dozen
1/2 cup butter OR margarine, softened
1 cup dark brown sugar
3 teaspoons ground cinnamon
Icing: Per Dozen
3 cups powdered sugar
6 tablespoons butter OR margarine, softened
5-6 Tablespoons of milk (add more if needed)
2 teaspoons 100% pure vanilla extract (Almond extract is super tasty too)
Zest of 1 lemon
(Optional: 4 ounces of cream cheese softened)
Preparation
Step 1
Cook and mash potatoes, then combine potatoes, potato water, butter, sugar, salt, and hot water in large mixing bowl. Stir until butter melts; set aside and allow to cool. Combine yeast and 1/2 cup warm water in small bowl. Let rest 5 minutes. Add eggs, 2 cups of flour and yeast mixture to potato mixture. Beat until well mixed. Continue adding flour, 1 cup at a time until soft dough forms.
Step 2
Knead on lightly floured surface until smooth and elastic (about 4 to 6 minutes), OR knead with electric mixer using dough hook. Plce in greased bowl, turning to coat. Cover.
Step 3
Let rise in a warm, draft free area (the microwave or unheated oven work great) about 1 hour until doubled in size. Punch dough down; divide in half.
Step 4
Roll out one portion of dough on lightly floured surface to a 12 x 18 inch rectangle. lightly brush with melted butter. Combine 1/2 melted butter, dark brown sugar, and cinnamon; spread mixture over the surface. Roll up tightly lengthwise, sealing edges. Cut into 12 slices. Place in greased 9 x 13 inch pan. Repeat with remaining dough. Cover. Let Rise 30-45 minutes until nearly doubled.
Step 5
Bake in preheated 350 degrees F oven for 25 to 30 minutes.
Step 6
Cool for 15 minutes. Combine icing ingredients and spread or drizzle over rolls.
